Banana and Oat Pancakes

  • 1 medium ripe banana
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1/2 cup plant based milk
  • 1 cup rolled oats
  • 1 tsp vanilla
  1. Place all of the ingredients into a blender or food processor and blend until smooth.

  2. Brush oil onto a non-stick pan and put on a medium heat.

  3. Add the batter and cook until the edges are golden (about 2-3 mins) then flip and cook the other side for a further 2-3 minutes. Continue until the batter is used up.

  4. Serve with maple syrup and your choice of fruit toppings.
